Grain-free Bread with Seeds and Nuts
Making grain-free bread has been on my to do list for at least a year. I started to experiment with it a few months ago, when I used a recipe as a starting point, but this time I haven’t used any grain or cereal. The result talks for itself: it turned out to be a perfectly sliceable loaf of bread, and it is really, really delicious. And on top of all that, it is variable: you can use every kind of seeds or nuts you have on hand or in your pantry. There are only two things you should put in your bread mixture: ground flax seeds and psyllium – these ingredients hold together all the other seeds and nuts you put in your mixture.
An early and nice memory from my childhood is the nice breads with different kinds of nuts and seeds. Since at that time we lived in the communist era in Hungary and only had white bread in the stores, this was a very unique and rare experience for my sister and me. My father used to travel to Germany once a year when I was a little girl to visit his brother there. For his way back home he always got sandwiches, which he kept for us children to eat. Dearest dad, he knew we loved those breads, so he didn’t eat his sandwiches… So we were waiting for him of course, because we didn’t see him for weeks, and at the same time we were waiting for the nice sandwiches. Since that time I have loved bread with nuts.
This could be the reason why I was so keen about the bread made only from nuts and seeds. The only question is: Is this still bread?
I made some small public research about the topic: Can bread made only from nuts and seeds be regarded as bread or not (nuts!)? Most people really liked it, but some of them started a long talk about the bread losing its original function this way. Well, what do you think? Is this still bread?
Grain-free bread with nuts and seeds
For a 750 gram loaf of bread
- 300 g ground flax seeds (You can ground it for example in a coffee grinder or buy it ground. The freshly ground is of course better, as always.)
- 100-100 g sesame seeds, pumpkin seeds, sunflower seeds, almonds (You can use every kind of seeds and nuts that you have on hand or you feel like. The only important thing is to use 400 grams altogether – in what proportion is up to you.)
- 1 tbsp. stevia or any other kind of sweetener
- 5 tbsp. psyllium
- 450 ml water
- 3 tbsp. oil
- 1 tsp. unrefined sea salt
- Preheat the oven for 250 degrees.
- Put all the ingredients in a big bowl, and mix it together thoroughly.
- Put baking paper in a 30x12 cm baking form.
- Pour your bread mixture in the baking form, and make the top of it even with the back of a spoon.
- Put it in the hot oven and bake it for 30 minutes. After half an hour, take the bread out of your baking form – you can pull it out with the baking paper. Turn it around and bake it in a regular baking dish for another 30-40 minutes.
- It is ready if it makes an empty sound when hit.
